docs: fix broken links to Accessibility guide in View, TouchableWithoutFeedback, and Text

Summary

Fixes broken links to the Accessibility guide in the View, TouchableWithoutFeedback, and Text documentation.

Changes

• Fixed the accessibilityIgnoresInvertColors anchors to match the generated heading IDs, including the iOS badge suffix.
• Updated the accessibilityState and accessibilityValue links to use the correct anchors.
• Fixed the accessibilityViewIsModal link in TouchableWithoutFeedback to point to the Accessibility guide.
• Corrected the accessibilityRole and accessible links in the Text documentation.
• Applied the same fixes to the versioned docs from 0.77 through 0.87.

Test Plan

• Ran ESLint on the modified Markdown files.
• Verified that the Docusaurus build completed successfully.
